Tomato sauce with hidden vegetables [

This tomato sauce is a real everyday hero – especially when vegetables don’t always go down well. Because the sauce hides a little secret: the vegetables are simply cooked along with the sauce and then puréed. The result is a creamy, aromatic sauce that contains everything – without any ‘visible’ vegetables.
The recipe is perfect for children or vegetable sceptics , but just as ideal for easily using up leftover vegetables. A simple, warming pasta sauce that always turns out well and is guaranteed to please everyone.

 

 

Tomato sauce with hidden vegetables [

Zutaten:

For 4 people

  • 1 tbsp olive oil
  • 1 small onion
  • 1 small carrot
  • ½ courgette
  • ½ red chilli
  • 1 tbsp tomato purée
  • 1 tin of chopped tomatoes (400 g)
  • 1 tsp mild paprika
  • Pinch of salt

Optional: 1 tsp honey or a little maple syrup (makes the sauce milder)

  • 300–400 g pasta of your choice

Zubereitung

 Preparation of the sauce

  1. Finely chop the onion, garlic and vegetables.
  2. Heat the olive oil in a frying pan and sauté everything for 5–7 minutes until soft.
  3. Briefly fry the tomato purée.
  4. Add the chopped tomatoes and spices.
  5. Simmer for 10–15 minutes.
  6. Blend everything until smooth to create a creamy red sauce.
  7. Season to taste (optionally, add a little sugar). If the sauce is too thick, thin it with water or vegetable stock.
  8. Mix with cooked pasta.

For anyone who likes a little ‘extra’ on their plate or is looking for new favourite recipes for children: these crispy oven-baked chicken nuggets are guaranteed to be a hit.

Tipp

If you want it even creamier, stir in 1–2 tbsp of cream cheese or a little ricotta.
