Strawberry gazpacho

A new take on a Spanish classic: sweet strawberries, melon and peppers. Garnished with toasted nuts, it’s a real eye-catcher – and a treat for the taste buds.

Zutaten:

  • 300 g strawberries
  • 300 g watermelon
  • 1/2 cucumber
  • 1 tsp paprika
  • 1 small red pepper (for more depth of flavour)
  • 1 small red onion
  • Salt and pepper to taste
  • 1–2 tbsp white balsamic vinegar
  • 2–3 tbsp olive oil
  • 1 pinch of chilli (and sumac, if available)

Zubereitung

Roughly dice the strawberries, melon, cucumber, pepper and onion.
Put everything into a blender or food processor.
Add vinegar, olive oil, a little salt, pepper and other spices.
Purée everything until smooth – thin with a little cold water or ice cubes if desired.

Tipp

Chill for at least 1 hour. Before serving, garnish with caramelised nuts and, if desired, sprinkle with mint leaves.
