Protein salad

A delicious salad to replenish your energy levels after exercise and aid muscle recovery, thanks to a mix of plant-based and animal-based protein sources. This salad is also easy to prepare and take with you.

Zutaten:

Ingredients for 2 people

  • 150 g tricolour quinoa
  • 200 g edamame, shelled and frozen
  • ½ cucumber
  • 60 g feta
  • 40 g walnuts, chopped

If desired, the salad can be served with 100 g of tuna or 100 g of chicken breast.

Dressing

  • 5 tbsp olive oil
  • 2 tbsp white balsamic vinegar
  • Juice of ½ lemon
  • Salt, pepper
  • ½ bunch of parsley or coriander

Zubereitung

Wash the quinoa and cook according to the instructions on the packet. In another saucepan, bring water to the boil and cook the frozen edamame beans for 5–6 minutes over a medium heat until tender, then drain. Wash the cucumber and chop it into small pieces; chop the walnuts finely; crumble the feta with your hands or cut it into small pieces. In a large bowl, mix together the quinoa, edamame, cucumber, feta and walnuts. Add cooked chicken breast or tuna if desired. For the dressing, wash and finely chop the herbs, then mix with olive oil, vinegar, lemon juice, salt and pepper. Pour over the salad, toss well and serve.
