Pasta alle Cinque Pi

Pasta alle Cinque Pi is a classic dish that most children enjoy. In just a few simple steps, this dish can be made more nutritious by adding protein, dietary fibre and vitamins from beans and courgettes.

A bowl of creamy pasta in a red sauce made from courgettes and tomato purée

Zutaten:

  • 500 g pasta
  • 1 tin (250 g) of cannellini or Soisson beans
  • 1 courgette
  • 5 tbsp tomato purée
  • 250 ml cream
  • Salt
  • Pepper

Zubereitung

Peel the courgettes, chop them into small pieces and boil them in boiling water until tender.

Drain the beans and rinse them. Place them in a food processor with the courgettes and purée until smooth.

Cook the pasta according to the instructions on the packet. As soon as the pasta is al dente, drain it and transfer it to a frying pan. Add the courgette and green bean mixture, tomato purée and cream. Stir everything together to form a sauce and season to taste with salt and pepper. Serve with Parmesan and enjoy.
