Crispy Gnocchi Salad

Crispy gnocchi are everywhere at the moment – and quite rightly so. Instead of being soft and boiled, here they are fried until golden brown and added to the salad, making all the difference.
Combined with fresh vegetables, a slightly tangy, creamy dressing and sweet pomegranate seeds, the result is a salad that has it all – fresh, flavourful and crunchy.
A perfect dish if you fancy something new that’s quick to make yet still special. Once you’ve tried it, you’ll hardly want to eat gnocchi any other way.

Crispy Gnocchi Salad

Zutaten:

for 2 people

For the gnocchi

  • 400–500 g gnocchi (from the chilled section)
  • 2–3 tbsp olive oil
  • Salt, pepper
  • 1 tsp paprika

 

Salad base

  • 1 small red onion (finely chopped)
  • ½ cucumber (diced)
  • 200 g cherry tomatoes (halved)
  • 2–3 tbsp pomegranate seeds
  • Chives

Dressing

  • 3 tbsp olive oil
  • 1 small gherkin, finely diced
  • 1 tbsp gherkin brine
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1–2 tsp lemon juice
  • Salt & pepper

Zubereitung

Fry the gnocchi until crispy

  • If necessary, pat the gnocchi dry gently with kitchen paper.
  • Heat a large frying pan over a medium to medium-high heat.
  • Add the olive oil.
  • Add the gnocchi straight from the packet to the pan (do not pre-cook) and reduce the heat.

Fry for 8–10 minutes until golden brown. Season with salt, pepper and paprika only at the end. Remove from the pan and leave to cool on a plate or baking tray.

 

Prepare the salad

  • Finely chop the red onion.
    Optional: leave to stand for 10 minutes in a little vinegar and a pinch of salt for a milder flavour.
  • Dice the cucumber.
  • Halve the cherry tomatoes.
  • Finely chop the chives.

 

Make the dressing

Mix well in a small bowl or glass:

  • olive oil
  • Pickle brine
  • Dijon mustard
  • Honey
  • Lemon juice
  • Finely diced gherkin
  • Salt & pepper

Leave to stand for 5 minutes to allow the flavours to blend. Taste and adjust:
Add a little more lemon juice or a pinch of salt if necessary.

 

Final mix

  • Mix the dressing into the salad base.
  • Fold in the pomegranate seeds.
  • Gently fold in the cooled, crispy gnocchi.

 

 

 

Tipp

 Do not move the gnocchi for the first 2–3 minutes so that a nice crust forms.
