Carrot and Sesame Energy Balls

This energy-boosting snack made with apricots, carrots, almonds and sesame is easy to prepare ahead for the whole week – and it’s completely vegan.

Zutaten:

Makes approx. 12 balls. A serving of 2–3 balls is ideal as a snack.

  • 40 g ground almonds
  • 10 g rolled oats
  • 1 small carrot
  • dried apricots
  • 5 dates
  • 1 tsp tahini (sesame paste)
  • zest of ½ lemon
  • a pinch of salt
  • 2 tbsp sesame seeds

Zubereitung

Remove the pits from the dates and chop them together with the apricots. Peel and grate the carrot. Add the chopped dates and apricots, grated carrot, ground almonds, rolled oats, tahini, lemon zest and salt to a food processor. Blend until the mixture comes together and is sticky enough to shape.

Form the mixture into small balls and roll them in sesame seeds. And that’s it – your snack is ready! Store the energy balls in the fridge, where they will become nice and firm.

Tipp

Sesame seeds are rich in calcium, a mineral that requires particular attention in a plant-based diet.
