Banh Mi-style sandwich

Inspired by the Vietnamese original, the Bahn Mi-style sandwich is topped with smoked tofu, crunchy carrot and plenty of coriander. It’s quick to prepare and is perfect for taking away or as a quick vegan lunch whilst working from home.

Zutaten:

For 1 sandwich

  • 1 baguette roll
  • 100g smoked tofu
  • soya sauce
  • 1 small carrot
  • vegan mayonnaise
  • a little coriander
  • 2 tbsp white wine vinegar
  • 1 tsp sesame oil
  • 1 tsp maple syrup
  • a pinch of salt

Zubereitung

Peel the carrot and cut it into thin strips using a vegetable peeler. In a bowl, mix together the white wine vinegar, maple syrup, sesame oil and salt. Add the carrot strips to the sauce, mix together and set aside. Cut the tofu into slices, marinate in soya sauce and fry in a frying pan. Cut the baguette roll open lengthways and spread with the vegan mayonnaise. Then top with the fried tofu and the marinated carrots. Garnish with coriander leaves and enjoy.

Tipp

Tofu is made from soya beans. These contain more protein than other pulses and are also rich in essential amino acids such as lysine and methionine.
