Moist peach muffins

These moist peach muffins are great fun to make with your little helpers. You can use different fruits depending on the season, and in no time at all you’ll have a delicious afternoon snack on the table.

Zutaten:

  • 250 ml milk
  • 70 g butter
  • 250 g flour
  • 25 g ground almonds
  • 50 g sugar
  • 2 tsp baking powder
  • Zest of a quarter of a lemon
  • 2 peaches (peeled and chopped into small pieces)
  • A pinch of salt
  • Flaked almonds for decoration

Zubereitung

Preheat the oven to 180 degrees and line the muffin tin with the cases. Mix together the flour, ground almonds, sugar, salt, baking powder and the zest of a quarter of a lemon. Melt the butter and add it to the dry ingredients along with the milk, then stir until you have a smooth batter. Peel the peaches, cut them into small pieces and fold them into the batter. Fill each muffin case with 2 tbsp of batter and bake for approx. 25 minutes. Check with a skewer to see if they’re done, leave to cool and enjoy.
